With a short and clear menu, created under the supervision of Japanese chef Takeshi Ito, on October 8, 2020, the Sake & Sushi restaurant Moshi Moshi opened its doors in Sofia. In addition to authentic sushi prepared by Chef Ito’s method, the restaurant also offers a smart selection of signature dishes, robes and tempura, executed to the high standard of modern Japanese cuisine. The menu also includes selected appetizers, desserts and miso marinades and soy sauces specially developed by sushi master Ito and chef Konstantin Kostov, which are matured on site. A long list of sake drinks complements the food at Moshi Moshi Sake&Sushi and relaxes restaurant guests in the spirit of a good sake experience. Takeshi Ito was born in Akita, Japan and has been in the food business for 25 years. “My hometown is known for the art of fermentation, as well as for good sake,” Ito says, “so we value food highly. Good food is good health. We should be more familiar with her. To seek new experiences, to learn its history, as well as to know where the spices come from. We call this approach to food in Japan Shoku Iku. And I practice it.” Takeshi Ito’s style combines modern cooking, often aided by science, with traditional recipes from old books and techniques passed down by word of mouth. Having traveled all over the world and participated in the creation of dozens of sushi restaurants, this summer Takeshi Ito was in Bulgaria at the invitation of Moshi Moshi Sake&Sushi. He created the menu of the new restaurant in collaboration with chef Konstantin Kostov, a top specialist in Asian cuisine. Chef Kostov will oversee the development of Moshi Moshi and its sushi chef Kalin Chapkanov. “What Chef Takeshi passed on to us is a unique method of processing, storing and 100% using the sushi products, which in our kitchen will be of the highest quality. The philosophy of making sushi and food in general, the attitude towards food… At Moshi Moshi we will work with a special blend of several varieties of rice and soy sauces that will mature in our barrels, we will use different fermentation methods that Chef Ito introduced us to, and we will combine all this with modern ways of eating sushi.” – says boss Kostov. In addition to sushi rolls, signature dishes, robes and tempura, the Moshi Moshi Sake&Sushi restaurant will offer a list of over 20 kinds of sake, selected by sake sommelier Krasimir Marinov. The traditional Japanese rice drink, often served with special ceremony in small porcelain cups, falls into a category of its own. Extremely curious and versatile, at Moshi Moshi it will be served chilled, at room temperature or heated depending on the customer’s preference, the season and its own characteristics.
