From the very moment you step into Dieci, it becomes clear that Gianfranco and Anna have created something truly unique. The passion they pour into this place is visible in every detail.. from the atmosphere and design to every single plate that leaves the kitchen. This is not just a restaurant; this is their home and as a guest you are welcomed with warmth, care and attention that rivals the feeling of being among your closest friends.

The level of sustainability that Gianfranco has achieved is beyond extraordinary. The closed cycle, the respect for nature and the dedication to sourcing and using every product with thought and care is nothing short of inspiring. This goes far beyond fine dining, it is a philosophy of life.

The menu itself is a revelation. Traditional Bulgarian products and flavors are elevated to a whole new level, crafted with such precision and love that every dish becomes a masterpiece. These are creations that leave a lasting memory and just as people naturally associate carbonara with Italy, here you can already draw an analogy between Bulgaria and some of Gianfranco’s culinary masterpieces. He is not simply a chef, but an artist who has carried the essence of Bulgaria’s land and flavors into his own interpretation, making it shine on an entirely new stage.

What makes Dieci even more special is the rare combination of absolute professionalism and genuine humanity. Gianfranco and Anna are people of remarkable experience, intelligence and culture, and yet they have preserved their humility, warmth, and authenticity. I am grateful not only for the amazing dinner, but for the entire experience as it was a lesson in hospitality, in care and in what it means to welcome someone sincerely.

Their contribution goes beyond their guests, they also give back to the community and through their work, they introduce us to regional products, traditions and flavors that many of us would probably never have discovered otherwise. This is not just a gift to Bulgarian fine dining culture, but to the preservation and celebration of the authentic culinary spirit of Bulgaria.

Dear Gianfranco and Anna.. the Michelin star is not simply deserved for you and Dieci – it is absolutely a must for all that you have created. But even without it yet, it feels like a three-star Michelin level of experience. For me, a visit to Dieci is the equivalent of gathering with close friends or family and is deeply personal, profoundly moving and unforgettable. And without a doubt, this will not be our last visit.

I am giving you the maximum rating that is possible here, but for what you have built and continue to improve every day, you deserve far more. Thank you both for sharing your artistry and your humanity with all of us.
