“Katsourbos” is the hero of the Renaissance Cretan comedy by Georgios Hortatsis. Katsourbou’s kitchen opened in January 2005 and was characterized by the Athenian Press as the “Renaissance of Cretan Cuisine”, where he established the island’s local cuisine in the capital.
